Safeway had cross rib roasts on sale. I bought a couple to cook for my lunches this week. I took them to about 140 internal temp. After they rested I sliced them fairly thin. I've been enjoying it. Kinda like a smokey roast beef. Wish I had some horsey sauce to go with it.
Definitely going to play more with cheaper cuts and see what I can come up with.

Definitely on the list to try. I had seen where people will wrap it in bacon to help keep moist, but I was reluctant to do it because I tried it one time with a turkey and I felt like the smoke couldn't penetrate as deep.
