We're having a cold, rainy weekend (at least it's not snowing!) here in Atlanta and that, combined with a couple great playoff games, the table was set for comfort food! After a trip to the butcher shop to see what looked good, I decided to roll with a couple of nicely marbled New York Strips to do a version of steak frites. This was also a good excuse to try out my new Grill Grates for the Weber and they did not disappoint!
Steak Rub:
Grilled Steak Fries:
Steak Rub:
- Fleur de sel
- cracked black pepper
- cracked green pepper
- granulated garlic
- coarse ground corriander
- coarse ground dill seed
- coarse ground brown mustard seed
- crushed red pepper
- 1 cup mayo
- 1/4 cup malt vinegar
- chopped fresh Italian parsley
- chopped fresh chives
- 1 tsp lemon zest
- 1 tsp granulated garlic
- salt and pepper to taste
Grilled Steak Fries:
- Cut russet potatoes into wedges and boil until fork tender
- brush with canola oil and sear either on grill grates or in a pre-heated cast iron skillet on the grill while steak cooks
- Season with sea salt
