Picked up a prime grade 13lb brisket from Costco Friday to smoke this past Saturday. Trimming gets easier each time but man is it still a task. Rubbed with salt, pepper a little granulated onion and a little granulated garlic. Put it on the WSM 22 at 300 degrees. Smoked fat side down for 4 hours using whispering oak and sugar maple chunks buried in KBB. Pulled it off, wrapped in pink butcher paper then smoked another hour. Checked it at the 5 hour mark, not probe tender. Checked it at 6 hours and was like butter. Pulled it and rested on the counter for 2 hours, still in the paper. Wrapped it with HD foil and tossed in the fridge. Sunday, Dad drove in from Charlotte and my daughter Abby was staying with us a few days before going back to Clemson for school. Pulled it from the fridge, unwrapped then sliced the flat, laying the pieces in a foil pan. Added about 1/2-3/4 cup of beef broth made with Better Than Bouillon, covered with foil then put in a warm oven. In about 15 minutes the meal was ready. We had bunco buns made with Edwards Wig-Wam ham, homemade french onion soup topped with crostinis and gruyere and finally the brisket with a sliced brioche loaf. After all that, we were down for the count.

Hey Hulagn1971 I just want to know one thing. How big is that stick you have to use to keep the boys away from your daughter??
Reason I ask is I have a 14 yo daughter and my stick is growing everyday !!! Also got 3 boys all grown, they were easy, I just whopped them with that same stick

One of my favorite episodes was this little prince from Utah, who attended MIT and was bossing the hell out of my daughter. Had him over for Thanksgiving, and made him eat raw oysters to prove his manhood. It was, shall we say, fun!

Troutman I outgrew the stick a long time ago. Funny story, when I met her last bf (a couple years ago, he did not last) I made sure to have my Glock 36 and Remington 870 tactical on the kitchen island on towels with the cleaning kits before he came over. My wife answered the door and brought him into the kitchen to meet me while I was "cleaning" my guns. His eyes got big as saucers,lol. Luckily, she can spot a fake guy miles away and is not remotely easy to win over. Smart girl.

I knew a guy briefly a number of years ago who was scared off when he found out that his girl friend's dad, who was in law enforcement (FBI, I think), was running a deep background check on him. He probably couldn't get away with that in today's world, however.

We don't have guns over here in Scotland, but I do have my rugby club and that usually does the trick when lads see me wearing my team's jersey!!!
