    Superb! Another cook and pics worthy of Pitmaster newsletter presentation! That reminds me... I'm going to dinner this week with a group from work to "The Rivers Edge" and they make an awesome Volcano Pork Shank

    I'm going to get it - it is like Osso Bucco but made with pork. I looked for a pic of it on Yelp, but didn't find one. I'll have to take a pic.

    I love Osso Bucco, and yours is what I'll have to make - will save to my recipe library. Thanks for sharing.

      I think maybe it is called volcano because some of the shanks are shaped like a mountain.

    Saw this yesterday. Just got back from the store, shanks in-hand. Tomorrow it’s Osso Bucco time! Thanks Troutman for the inspiration and recipe!

    1-day later, OMG, this is SO delicious!
    Smoked on the pooper for almost 2-hrs, then finished in oven at 310 for another 2+ hrs. Used BBBR, but the Osso Bucco was too peppery, and I love pepper. Note to self - a little less next time; otherwise, perfect.

    Ours was on polenta slices with roasted squash. Winter comfort food for sure.

      I did find a pic of Rivers Edge "Volcano Pork Shank on Trip Advisor... though this one is not shaped like a mountain. I'll order one of these tomorrow night.

                Actually done osso bucco in the oven last night. Took it to 200f and turned out great. Very under rated cut of meat.

              Looks so awesome!!. It's hard to find veal shanks in my neighborhood. I have done it with pork and regular beff shanks..but veal is the way to go.

              Ha made osso last night. My recipe is very close even the bouquet .. except red wine vs. balsamic and homemade bone stock vs. beef. Definitely gonna try smoking shanks next time.

ID:	920041 I did OB a few weeks ago with beef shanks from Porter Road. Did it in the dutch oven on the stove top. Gently simmered for a few hours. Turned out great. I have never seen veal shanks around here locally. I need to look for them on line. Any guidance?? The beef was kind of strong. The milder veal would be better I think. I must try the smoking step too. Sounds delish.
