holding/rest time question

    holding/rest time question

    i am doing my first brisket cook overnight tonight, and I am planning on getting it done early and holding it wrapped in oven for a few hours , my question is does that holding in oven at 170 degrees, count as the resting time, or do I need to pull it out of oven and let rest in a cooler a couple hours prior to serving??? thanks for the info

    170 too long can overdo things a bit since many ovens will cycle up to 195. I like to let it cool at room temp down to about 145 internal first, if I am going to the 170 oven for at least an hour or two.

      thanks, so let it cool then I should be good to hold for a couple hours....then serve from oven??

    Yeah, same as jerod. Let it fall and only if you need to bring it up, plop it in the oven at 170 until it raises a few degrees to bide you time until serving.

      Just saw Jerod’s comment. Yep, best bet is cooler for as long as you can! Oven is your backstop if the guests aren’t ready to eat!

    Wrapped in a couple heavy towels you can easily get 4-6 hours in a cooler.

      If you have a warming drawer, that can work. Even on high, my warming drawer doesn't get much above 150. I keep a pit probe in the drawer if I'm using it to be on the safe side .

        Woah! I set my warming drawer at "2" for 140 - 150. If I turn it up to "5" is gets pretty darn warm! Great little kitchen "tool" isn't it? I don't know how I every lived without mine.

      Has anyone ever tried using the drying cycle on a dishwasher?

        Aye-yi-yi the unenlightened spouse will real think I’ve lost control when I tell her not to use the dishwasher because I m holding the brisket in there!
