Moving along with the ratings push: Until Meathead posted his pastrami recipe and a whole bunch of folks here jumped on the bandwagon with rave reviews I had not tried pastrami. I had smoked corned beef with terrible results. I smoked a nice smoke lick once and never considered corned beef again for the BBQ.
Advice as simple as "Rinse the corned beef before applying rub" gave me a "duh" moment. I still haven't used a brisket for the recipe because my Costco has been stocking Snake River Farms corned rounds which, when combined with the recipe, are delicious. I stock up on them and still have 3 in the freezer. If you have tried the recipe and haven't rated it, give it a go. If you haven't tried this Pastrami, you are really missing out. It is delicious!
