Woke up this morning expecting to smoke a beef rib plate but instead found torrential rain and flash flooding. Somehow there was a brief pause in the rain and I was able to load the pellet hopper and get the cook started. A little late but better late than never. Didn’t even go back outside and the pellet pooper held relatively stable for ten hours through rain and wind. I had to crank it up at the end to push through. Not the best product ever but pretty damn good all things considered. I tried using mayo to hold the BBR for the first time. Didn’t notice much of a difference.

I have been using mayo more and more on things like chicken and pork butts. It's not a taste thing - I don't believe it adds much there. But, I do find it to be a really good way to adhere the rub spices, especially on chicken. My last 2 smokes used mayo on chicken and I do believe the rubs (MMD) stayed put!
