    Another Charity Cook

    I was recently nominated to cook for the UMARMY event in Henderson Texas on Tuesday night. On the menu is brisket, smoked bacon mac & triple cheese, Jack Daniels baked beans, elote en vaso, and chocolate chip cookies. Feeding 50 workers plus some staff. Ill post pictures as I go. Tonight will be trimming, injecting and dry brining the briskets, as well as making up the sauce. I made up the rub and the injection yesterday. Sunday night I will bake the cookies. Monday night I will be putting the briskets in the cooker; and Tuesday I will start the three sides, hoping to have it all come together by around 1600 so I can arrive in time for chow at 1800. I will be using both my vertical gassers, my Holland grill, the range and the oven. Should be a fun cook logistically to get it all timed out right, but somehow I always manage to nail it.

    • We have two weber kettle grills (one LARGE and one small/average), the SnS and the Weber Smokey Mountain 18" smoker. We use both natural lump charcoal and KNB for smoking and measure our temps with a Maverick 733, thermopen and MK4. Favorite beer depends on what is cooking (alt answer is yes).

                            Worked out great. Came togeter perfect as usual. Brisket, Jack Daniels baked beans, smoked bacon mac & cheese, two different sauces, white bread, onions, pickles, and cookies.
