Filet Mignon is a very tender piece of meat. I grill mine hot and fast to rare or slightly above rare, like 125-130*. If you want medium rare you could probably take it to 135*. I normally bacon wrap to add some flavor. Don't try to smoke it or do it low and slow, you will kill it.

One thing I did forget to mention, there is carry over cooking time. If you want 125* for instance, take them off at 118-120* and let them rest. You hit about 125* with the carry.
