Sweetbreads usually from the heart but sometimes the throat. Excellent smoked!!
remove excess fat from gland and soak in lemon juice and white vinegar for 1 hour. Split in half, coat with Memphis rub then smoke at 275 for 2 hours. You can cut and serve with Teryaki sauce or fry em in herb butter to make em more crispy. To die for...
