I had some time today for a little mid week BBQ. And after 2.5 years on this site I’m finally learning portion control. This was a nice mid week meal and I don’t feel like I’ve got to give birth bc I ate so much. Hoorah!!
Beef ribs dry aged and rubbed w BBBR. 6 Hrs on the Primo at 275. Buttah. Although I only had a handful of apple wood chips left so I ran out of smoke after an hour or two. Still tasty. I made Francis Mallman’s burnt tomatoes- those are a real winner. I also made his potato salad w mustard vinaigrette, onions, smashed black olives and oregano. Yum! Also a nice Brussels slaw.
Beatiful weather here in NJ so I pruned the Dogwood tree, made some ‘Que, sat outside and had a couple beers and sold a condo! Helluva good day! All is right with the world.
