I have a 48" Lang Deluxe smoker, Rec-Tec pellet smoker,1 Weber Genesis 330, 1 Weber Performer (blue), 2 Weber kettles (1 black and 1 Copper), 1 26" Weber kettle, a WSM, 8 Maverick Redi Chek thermometers, a PartyQ, 2 SnS, Grill Grates, Cast Iron grates, 1 ThermoPop (orange) and 2 ThermoPens (pink and orange) and planning on adding more cooking accessories. Now I have an Anova sous vide, the Dragon blower and 2 Chef alarms from Thermoworks.
I find no need to sear twice and I add the herbs plus S&P after the hot tub bath. Can also stretch time out to 36-48 hours. It really does turn out awesome!
OK well I’m a huge fan of rare SVd chuckle, done a few of them. They are good and steak like but better than most prime rib he’s had served to him may be a bit of a stretch. Maybe he’s eating at Ponderosa a lot

I have one done roughly the same (no pre-sear) in my fridge right now, only I smoked it a bit after SV processing.
