    Brisket Saturday and managing temps in the rain

    Seems like it always rains when I’m cooking brisket. Today I have an 18.5 pounder pre trim weight in the PBC and 4 racks of ribs in the Weber 26”(3 baby backs, 1 St. Louis spare).

        Nothing kills temps like windy rainy weather. I guess 20 below would affect things also.

          I've cooked in -22F and +95 & rain and I says 95 and rain is worse. Water sucks the life out of your temps.

            ha - I swear to you the running joke with family and friends is that my brisket cooks are a better predictor of rain than anything. I feel you.

                It took 12hours but I wrapped mine. The PBC was the champ as usual!

              What an experience, it began to rain steadily I wrapped brisket at 170 which was about 4pm. Wrapped ribs at 4:30 power went out at 5:15 pm and our dinner guests started arriving at 6 pm! We located flashlights and lanterns and smoked a few stogies. Brisket hit 205 at around 6:30 and I placed it in the warm oven. We ate at 7:45 pm I sliced brisket and ribs the best I could with flashlights and candles. We all sat around and devoured the brisket and ribs and the power came on about 30 minutes into the meal. My guests said it was the best brisket they ever had. They were from Canada but I must say it was damn good! All in all a cook and a dinner party to remember and the que turned out great!

                      I know, but it was dark and no power so that’s kind of an excuse right?
                      It was pretty crazy, couldn’t tell if I was cutting against the grain or not.
