Doing a brisket flat tomorrow and think I'm going to chop some for sammies. Got about 5 or 6 of my buddies coming over to plan our spring clean up party at the deer camp in May. Yeah that's right we have party's to plan our next party!
I will for sure smoke some whole onions and then slice them up for a starter but what are some other condiments I might want to go with? I don't want to pile so much on that the brisket gets lost but just a few things to build the flavor.
I like caramelized onions. Smoking jalapeños is good too, just don't dry them up. A little bit of provolone. If you want a condiment a little bit of BBQ sauce.
A nice restaurant style soft bun, and a few layers of sliced brisket. Do the rest as sides- macaroni salad or potato salad, maybe some sweet pickles. And beer!

Now I have an Anova sous vide, the Dragon blower and 2 Chef alarms from Thermoworks.
Keep it simple and let the beef flavor flow. Onions and a slice of stacker(thin sliced) pickles. I offer sauces to my guest but I like it plain. Just something bout that combo that makes my toes curl. Meatheads sauces goes well with the beef. And as a side I like meatheads old fashion potato salad with 1 extra egg added
Thanks for all the suggestions! Think I'm going with smoked onions then sliced and caramelized on the flat top. Some of these guys like hot stuff so I'm going to pick up a jar of pickled jalepenos to have on the side and some horseradish spread. Some rustic hoagie buns and provolone cheese.
Since I love using the flat top think I will crisp up the brisket slices on it and toast the buns. Melt some cheese on the brisky and put on the toasted buns and let everyone add what they want.
