    Nailed it.

    I finally nailed brisket. Well... Almost. It was too cold and I was too sleepy to mess with my WSM so I pulled it at 4am and wrapped in foil in the oven at 225. As a result I don't think the bark was totally set and I think that it could have gotten a little darker. But otherwise was perfect.
