    I am cooking one now that was in the fridge for about 45 days. Gonna be aaaamazing!

      My normal routine is to buy a prime packer from either Costco or HEB Grocery, wet age in my beer fridg for 30-45 days (pack dates verified by the meat cutter on the delivery box), cut off the thin end for pastrami and smoke the remainder. In other words I have brisket and pastrami every 4-6 weeks. If I want a break from that I freeze it and begin all over again. It’s no sin either way.
