So I purchased some short ribs from a farmer near me and was excited about trying them after having them for the first time at a restaurant at the Plaza in KC. My recipe was from Malcom Reed and once again he didn’t disappoint. These were very fatty which made them extra tender but not a huge amount of meat on each rib. Overall I’d recommend his recipe. Maybe trim some of the fat off next time?

Now I have an Anova sous vide, the Dragon blower and 2 Chef alarms from Thermoworks.
