    Here's the beef!

Saturday I slaughtered a heifer for a neighbour and it is now aging on my front porch. Next week I'll be cutting and wrapping.

Yeah, you live on the side of the state with the most people per acre and teeth per mouth. ;-)

You might call it a side of beef, I call it a wreath!

Construction trade might call it trim.

Not this week or ever. A 2.5 metre locked gate and three dogs discourage them.

You're gonna need a BIG smoker.

Stay tuned, it's amazing what knives, a saw, and a meat grinder can do.

Of course, but do you think there is enough meat for both of us? ;-)

After you've done that a time or two, you KNOW where your various cuts come from! Good job! Congrats on a job well done! How much do you estimate she weighed?

Thanks,I've done a score of hogs, this was my first cattle. She was a two year heifer, it took all of three of us to get the front quarters up. I'm not the best guesser of weights, a neighbour who helped said 200kg.

Almost would guess more than that. Was thinking it looked about the size of an elk. Older than veal but not quite the size of average slaughter beef. Interesting to hear how it tastes.
