    Two prong attack on a Prime Tri-tip.

    So here's my game plan. This is more out of curiosity than anything else. Got a beautiful Tri-tip the other day, which is my absolute favorite cut of meat. My PBC is fairly new and I haven't cooked a Tri-tip on it yet. However, my kettle and Slow-n-Sear have perfected many. So this time I'm going too take the Tri-tip to It-115 on the PBC and sear on the kettle. Let's see what we get in the end? Click image for larger version

      I’ve Never done tri-tip. Don’t even know if it’s available by me. But everyone raves about it.
      This is one cut I gotta find and try.
      Your’s looks amazing so far. Great marbling.

        Depending on where you live you may have to ask the butcher to order it for you. In some places you may not even be able to get it. If it's not popular but available prices can be around $1.99lb.

ID:	406856 The PBC cooked alot faster than I figured. Missed my temps. Hit med-med rare, Buttttt, absolutely no complaints. Loaded with juice, sear was georgous. Used a little Jack Daniels oak chips which definitely shown through. I'm happy!

                1 tablespoon paprika
                2 teaspoon garlic powder
                2 teaspoon onion powder
                2 teaspoon dried rosemary
                1/2 teaspoon cayenne pepper

                  Wow nice piece of meat. Also noticed the "pin wheels". I've gotten those form Costco before, they are fantastic. Nice work on the Tri-tip !!!
