    Let the weekend begin..

    I selected a smaller packer this time because I liked it's shape. First, it was Angus.. second, the flat looked thick for a small brisket.. third, it didn't appear I would lose a lot to trim. Started at 12.5 pounds and I trimmed exactly 2 pounds. I won't separate this one before hand. I plan a nice, slow, easy cook during the games today.

        Yep... It has become more common around these parts. We had them on the farm when I was growing up.. not sure what all the fuss is about these days.. 🤔

        to be certified Angus beef, it has to be choice grade 1 or 2, so you are ensured a good piece of meat, right below prime.

                  I can tell this will wind up being a long smoke for such a small brisket.. but the color is coming through nicely with this mix of pellet.

                  Louisiana Pellets was having a sale on their competition blend so I picked up a couple bags. I note that they appear to burn a bit hotter so the controller backs off the feed. Less usage than I typically see

                  I hope.. it is sort of gasping at 140 like it wants to slow down.. I am debating kicking in a bit more heat and back off the smoke.

                  It came off at 3 a.m... err.. 2 a.m. with the time change and is sitting in the cooler waiting on the caffeine to catch up. Smobot said 202*... Ice pick said butter...
