Had Barney and Betty Rubble over for Friday night steak dinner. Of course with that we have to endure that delightful child better known as Bam Bam;

....so in his majesty's honor I pulled a brontosaurus steak out of an iceberg to prepare. Got one over at that Paleozoic emporium better known as Costco. This puppy was a 1 1/2" prime, bone-in rib-eye dying to be eaten raw by the boy but I convinced his parents that medium rare would have to suffice. Here it is ready for its over nght salting;

After applying some of Meathead's Big Beef Rub I slapped it on the old gasser at about 275 to roast for a while. Had to fight off a Physornis (look it up) who attempted to rob the pit;

Brought this big boy up to about 115 and gave it a rest. Then cranked up the old sear zone to flame thrower level and gave it a good reverse sear with some Ghee;

At a perfect IT of 130 we rested then carved this gargantuan in an attempt to feed all comers. Bam Bam, with all his verve, decided he only wanted that big bone so last we saw he was running down the block followed closely by the neighborhood dogs (poor dogs). Oh well, we enjoyed the meat anyway, it was tender with melt in your mouth goodness. Next up will probably be a Woolly Mammoth roast, hear its lean and tastes like buffalo. Any suggestions on how to smoke would be greatly appreciated. Happy Smokin' Ya'll..
