    Why a whole beef tenderloin?

I like a great steak! And my steak of choice is tenderloin. I took a road trip yesterday to The Flora Butcher to stock up on some BBQ meat and I purchased a whole waygu tenderloin to butcher myself. Trimmed off the silver skin and cut into 1.5" steaks. The end pieces I wrapped in bacon.

    Good eats ahead!

That was the very reason I joined Costco They use to have whole (with peel and everything) Tenderloins for around 50 bucks) for the amount of steaks you could get from 1 tenderlion it was a great deal now its around 200 bucks and not a good deal at all. Enjoy those they look wonderful!!

Absolutely. They also used to have Prime and Choice with no difference in marbling. Prime didn't look a thing like the Waygu. You could save big $$ on the Choice. Now there is no Prime and the Choice price is sometimes higher (per lb) than their filets.

Yes tbob4 I have noticed that myself. I'll admit I am old I remember when Chicken Wings could be had for little of nothing (now they are the same as Chicken breasts) or Skirt steaks were just a few dollars now more expensive than sirloin. I'm really digging Chicken thighs now so guess that means their about to sky rocket in price lol

that is the best marbeling I have ever seen in a tenderloin, but then again I am a ribeye fan myself. Love Texas Waygu ribeye steak rare, and then kissed with a sear plate. I may try loin again.
