I'm holding you personally responsible. I just custom ordered a 12 pound pork belly, it'll be in next week.

Once you discover how easy it is you'll only get store-bought in the most dire emergency. Mea culpa!

Thanks folks. I've been smoking for years but hadn't made the jump to this yet. Already got the thumbs up when my 6 year old grandson asked for seconds and my dad will be here shortly for his hot pastrami sammie so I'll see what he has to say.

          Bacon huh?

So for my dads visit his dinner was hot pastrami on rye with homemade coleslaw, Russian dressing, baby Swiss cheese and corn on the cob. He's going to bed with a full belly as is my grandson.

Fabulous looking pastrami! I already had breakfast, and now I am hungry again.

We just finished a country breakfast. He wants to take the pastrami home for later.

Ok, tomorrow I'll be trying my first pastrami. Quick question -- MH (mildly) recommends fat side down for a brisket, fat up for pastrami. Thoughts?
(PS - I haven't been on the Pit side in a while. Cannot believe how many posts! Impossible to find if/where this has been discussed before. Might be time for truly advanced search & indexing. Good kind of problem.)
