Sooooo it turns out that being friendly with the owner of a local bbq restaurant "Finks" in Suffern, NY. has advantages. I asked him where he gets his beef ribs from, to which he replied "my meat vendor". I told him that I couldn't find any locally unless I bought 100lbs from my butcher at a ridiculously high price. I think he said about 12 dollars a pound. Not happening.
Dave "Fink" than responded with "if you want some I have plenty". Hmmm that decision was easy. "sure" I said.
He than proceeds to go into the kitchen. Comes back out and says "it'll be $30.00 per plate". Ok fine I'll take 2. @JCBBQ
3 minutes later he comes out with these.

​​ so moral of the story is - if you want something you can't find in the store, ask your friendly pitmaster.
And I had to use my floor scale cause my kitchen scale couldn't handle the weight.
