    Just made this for lunch for my coworkers.

    Prime brisket from Costco, 7.5# after trimming (I intentionally picked a smaller one because there are only five of us). Injected with beef broth and dry brined with kosher salt 24 hours before cooking. Olive oil slather and BBBR right before I put it on the grill. Traeger Select at 225, roughly 16 hours to reach 203, wrapped and held in 170 deg. oven for about 3 hours until cutting and serving.

      I'm assuming that's for tomorrow's lunch.
      As of right now that little beauty looks deeeeeelicious.
      Think you're gonna have some happy coworkers.

                        Thanks man. I know some people like to knock pellet smokers, but I've been happy with the results over the last several years.

                        You definitely should be! If someone showed me that photo when I was walking into Home Depot looking for a grill, I'd buy that pellet smoker in a nano second.

                      Actually, it was Tuesday's lunch. Cooked it from Monday afternoon to Tuesday morning. And it was delicious. I also made them some bacon-wrapped onion rings as an experiment, but I neglected to get a picture of them.
