. . . to check on the brisket! First one done and in the cooler resting, wrapped in foil, cardboard, a blanket and a towel. 11.5 hours on the smoke (yep, got up at 3:30 AM to get it on), and resting for probably around 3 hours until we eat. I'm nervous it's not tender enough, but I guess I'll find out soon. Will post pics when I open it up!
