Yesterday I smoked a 13.5 pound CAB choice packer beef brisket on my Backwoods G2 Party smoker that I purchased from my local meat market. I took some of the point and flat to my next door neighbor, Tom, who is a retired CEO of a large trucking company. He just called me, said that was the best barbecue he'd ever had, and asked me if the next time I use one of my smokers, would I buy a brisket and smoke it for him. He agreed to pay for the brisket plus pay me for my time and charcoal used. I told him that rather than charge him for my time and charcoal, if he would pay for an 18-20 pound Snake River Farms Wagyu Gold Grade brisket (I explained what Wagyu was), I would smoke it and give him half. He agreed. That's my plan for next weekend.
