    Ladies and Gents. NAMP 123A SRF

    Finally got some beef ribs! Going on the stick burner tomorrow although its supposed to be some pretty crappy wind and rain all day. We will see.

    These came today from Snake River Farms. I am Sooooooo pleased. It took 2.5 days and they arrived frozen solid. 15 pounds of Wagyu bliss. Not sure how to control myself. I usually freak out about cooking $250.00 bucks worth of meat!

          That's a beautiful hunk of meat...😜 Only a small percentage of humans will ever get an opportunity to consume such an incredible piece of beef. Stay calm and act like you know exactly how the do this cook because you know you do. Take lots of pictures.πŸ‘

            The average Joe on the street would look at the beautiful pictures you are going to take and read that this piece of meat is Wagyu grade meat, not having a clue what Wagyu means, and say... why did you have to burn it so badly. They think bark is only what dogs and trees do.😬

                    One hour mark. Man the Pecan is smelling incredible! The dang winds are gusting to 40 broadside on the pit but she's holding steady enough around 250 for me.
