    Went to Costco to buy Professional grade Kingsford briquets today...πŸ€—

    I did stroll by the USDA Prime grade beef display too.😜
    • Prime grade Tri-Tips are a no brainer I figured. I'll SV them and then sear them on my charcoal starter.
    • Prime grade Sirloin strips that i'll dry brine and put just 2 strips each in vacuum sealed bags, for small lunches and dinners. SV and then sear in a cast iron skillet.
    • Prime grade Chuck bone-in Short Ribs to be smoked.
    • The Kingsford Professional was 2 bags for $20.

          Scary Mary just got home from a 2 week business trip and said she needed some good home cooking.πŸ‘ I thought I can handle that. Tomorrow I will serve her some great food.😜

            Very nice.
            Why do we all have the problem of going into a store for a particular item and come out with a whole bunch of things we don't need.
            Although some tri tips,short ribs and a few strips are,I guess things we do need. Damn all these stores.

              Prime grade Chuck Short Ribs at low prices is irresistible. Prime grade Tri-Tips... come on man, who can resist that? Prime grade New York steaks cut to the perfect size for Sous viding and searing in a cast iron skillet for lunch or dinner. It doesn't get easier than that.Γ°ΕΈΛœΒπŸ€™

              I haven't opened that package yet but I'm sure there are 4 tri-tips in there. $16.50 per Prime grade tri-tip is a great value. Most stores don't stock Prime grade tri-tips either. They usually have Select or Choice. I'll SV'ed them for 15 hours at 131°. It will be as tender as a Filet Mignon.😜

              Ernest ... many people look at cooking as a necessary chore. Some of us look at it as our fun and creative playground. When I'm cooking all other issues disappear. Watching friends and family truly enjoy eating something I've made for them is worth every hour of labor.πŸ‘Œ

            Nice, conrgats! I stared hard at some shorties on sale at my store yesterday, use-by of today, it was painful to say no but I wouldn't have had time to get 'em cooked today... I'll live vicariously through you.

            I dry brined the Tri-Tips overnight and put them in vacuum sealed bags this morning. 2 went into the SV bath tub this morning at 6:00am and 2 went into the freezer to be cooked sometime later. I'm going to sear them about 4:45pm and serve them this evening at 5:00pm. Pictures will follow.

              I bought two 19-pound packs for a retirement party this weekend that I am cooking for. They will be all smoked. The difference, I have found, between the bulk pack and the two-pack (besides the $2 per lb price hike) is the silver skin. I spent about an hour with the fillet knife trimming it off before rubbing last night. The marbling on most is consistent with the Prime found in the two packs, but two from each pack seemed to be more Choice than Prime. Did you find the same results? I've been looking out for the ribs. They haven't shown up at my Costco, yet.

                Yes... I had to trim the silver skin too.😑 On a cow that is graded as USDA Prime grade the tri-tip will not be nearly as marbley as the ribeyes and neither will the tenderloin. There's a difference between Select and Choice tri-tips but not a big difference from Choice to Prime.

              Tonight's SV'ed tri-tip for my friend Scary Mary. SV'ed to 131Β° and de-bagged, blotted dry, beef love applied and BBBR on 1 and MMD on the other. Mary prefers the sweeter MMD.

              I seared them on the Weber kettle with the SnS so I could sear both at the same time. All went well...πŸ‘

              Tender as a Filet Mignon and a good French baguette too.😜
