Beef Chuck Riblets

At 2 hours the PBC was opened to sauce the pork ribs and the beef Riblets looked a little over done. They were on the verge of drying out but I caught them in time. The meet was a bit tough because I didn't want them to dry out if I cooked them a bit longer. The flavor was great. I probably should have wrapped them after about an hour since there was such little meet on them. They made a nice little appetizer
