I'm debating about trying some Choice briskets and was wondering what you guys thought about the difference between them and Prime.

Hi, my name is Darrell. I'm an OTR truck driver for over 25 years. During my off time I love doing backyard cooks. I have a 48" Lang Deluxe smoker, Rec-Tec pellet smoker,1 Weber Genesis 330, 1 Weber Performer (blue), 2 Weber kettles (1 black and 1 Copper), 1 26" Weber kettle, a WSM, 8 Maverick Redi Chek thermometers, a PartyQ, 2 SnS, Grill Grates, Cast Iron grates, 1 ThermoPop (orange) and 2 ThermoPens (pink and orange) and planning on adding more cooking accessories. In my experience, Prime is quite a bit better. I only have Prime packers where I live. But the select flats I've cooked are noticeably poorer in quality, when compared with separated Prime flats.

Whichever you choose, take a look at the pit for advice on cooking times and temps. The Prime beef cooks to a lower internal (195) temp for pulling and the stall can be shorter. The nice thing about the pit and all of the new technology that is being used is that the folks here do a good job of articulating the difference in times and temps between the two grades. It isn't always the fat with the prime but rather the connective tissue or lack thereof. The prime flats that I've seen here didn't have anymore fat than the Choice, but they were definitely more tender straight out the package. Talk about some flexible suckers.

I'd buy Prime if you can get it and afford it. But if not, I wouldn't hesitate to use Choice. I've used both and have been plenty happy. In fact, with a generous fat cap even a plain Choice flat by itself is darn good, nearly indistinguishable from the Prime flats I've done. What I do not personally think is worth the upcharge is Wagyu.

Huskee, totally agree on Wagyu. Every Wagyu brisket I've had from Snake River Farms though has been better than any prime briskets I've had, but you pay the price. When you really want to splurge, go Wagyu gold from SRF, it's incredible.

wesbh89 If its your 1st try or beginning stages, I would go with choice, unless prime is comparable in price. When done right, it's heaven on earth. When any/many variables go wrong, it can be frustrating and feel frustrating. I would suggest choice, reps, and saving prime for when you hit the sweet spot.

I typically always buy Prime. For me, I have noticed a firmness difference out of the package as Jerod Broussard mentioned. Also, if Costco keeps it up, I will always buy Prime. By me, they have Prime for $2.99/lb and Choice for $4.39/lb. It doesn't make much sense to me, but I'll go with it!
