    Estimated Cooking Time - Roast Beef Low and Slow

    Hi Meathead.....New to the site and just LOVE it!. I am doing a Pit Beef this Sunday. I have read a lot here and watched videos too. I know I saw/heard you say it more about thickness than weight when it comes to cooking big cuts of meat, but for the life of me I can find exactly what your estimate was for roast beef.....approximately X minutes per inch on an indirect low and slow cook. Sorry to ask something you have already answered I just cant seem to locate the answer again.

    I don't think there is an inch index to cooking time. Tell us what cut of beef you are cooking, at what temperature, to what temperature Of doneness and how thick it is and someone can get you in the ballpark.

      Thanks LA.....have not purchased the roast yet but will do so later in the week and I will supply all the above. Cant wait to fire up the cooker!

    LA Pork Butt , Gave You a Good Answer! Fill in a Few of the Blanks and I bet You will get a Ballpark Answer that Will be Close Enough! By the Way What are You Using for a Themometer to Monitor Your Cook! I would Recommend either a Maverick et 732 or 733 Dual Probe Leave in Thermometer paired with a MK-4 Thermopen Instant Read by ThermoWorks!

        This was obviously a small cut; however, the stall still lasted a little over 2 hours. I would think that for larger cuts you are beginning to push into 9, 12, 14+ hours. I'm sure others have way better experience than me!!!!!!!!!!!!!!

      Check the prime rib recipe. I followed that for a Christmas cook and it was dead on. I'm on my mobile or I'd link it. Sorry
