Hi Meathead.....New to the site and just LOVE it!. I am doing a Pit Beef this Sunday. I have read a lot here and watched videos too. I know I saw/heard you say it more about thickness than weight when it comes to cooking big cuts of meat, but for the life of me I can find exactly what your estimate was for roast beef.....approximately X minutes per inch on an indirect low and slow cook. Sorry to ask something you have already answered I just cant seem to locate the answer again.

I don't think there is an inch index to cooking time. Tell us what cut of beef you are cooking, at what temperature, to what temperature Of doneness and how thick it is and someone can get you in the ballpark.
