OMG! I just found an idea that I am taking home, filing off the serial numbers and claiming!!!!

Beef Wellington Bites!
Pound or two of Babby Bella mushrooms (portabello mushrooms)
wipe with damp cloth whiz through food processor until a nice small paste.
place in a dry pan with a tablespoon of butter and a 1/2 cup red wine. cook until dry or nearly dry. allow to cool.
thaw puff pastry. roll to 1/8" thick
Nice tender steak. in this case, you might not really need the wellington loin roast, just a really good piece of meat. cut to bite sized pieces. Sear off in screaming hot pan. toss with a good mustard as it comes off the heat. set aside. allow to cool.
cut pastry into 4" squares. on each square, lay a 4" or so piece or pieced together prosciutto ham, a dollop of duxelles and a piece of steak.
Close pastry over the whole bite. use egg to seal the pastry and pinch closed.
arrange and inch or two apart on a baking sheet with parchment paper liner, brush each bite with egg yolk bake at 400 degrees for 15-20 minutes until golden brown. arrange on serving dish, take a bow!!
