        Nice charts, but they are perpetuating myths in there. Again with the pressing on your hand to tell doneness level, and resting your steak as long as you've cooked it, in order to "seal the juices in"... I guess a lukewarm steak makes a waterproof seal? Smh.

          Ya, I know there was some worthless stuff in there, but also good, and I figured our Pit brethren will be able to sort that stuff out.

          Dr ROK, yeah you're right, members who've read AmazingRibs will be able to weed that stuff out. The charts are wonderful explaining where diff cuts come from.
