I have a 48" Lang Deluxe smoker, Rec-Tec pellet smoker,1 Weber Genesis 330, 1 Weber Performer (blue), 2 Weber kettles (1 black and 1 Copper), 1 26" Weber kettle, a WSM, 8 Maverick Redi Chek thermometers, a PartyQ, 2 SnS, Grill Grates, Cast Iron grates, 1 ThermoPop (orange) and 2 ThermoPens (pink and orange) and planning on adding more cooking accessories. Now I have an Anova sous vide, the Dragon blower and 2 Chef alarms from Thermoworks.

I've got a butt rolling right now. 6 am start. Pain in the backside when you cant find your torch. Lighting my KEG with it was a huge pain. I have to use my chimney and the procedure was totally throw off. I had temp bouncing all over the place. Looks like I am in the market for a new torch. Ever since CeramicChef showed me the light, I have used a torch.
But going back reminds me of all the frustration I had while lightning my keg and trying to get a small, hot fire going. Ceramic Chef's lighting technique for the Kamado should be written in stone as far as I am concerned. I am going out to buy a new torch, now that my temps have finally settled down.
