    Chuck roast

    I cooked my first chuck roast today on the Traeger smoker and it was very good. I dryer brined it yesterday, this morning I injected it with beef broth then I added big bad beef rub and put it on the smoker. I tented it in Click image for larger version

ID:	232678 aluminium foil after it hit to 155F and cooked until it was up to 204F then I let it rest afterwards. It was very good.

    Looks great. How long was your cook and at what temp were you at??

      I cooked for about 8 hours at 225F.

                Looking great!! Do you usually take them up too 204 F? Just curious. Is it usual to take it up that high in order to get probe tender results? Great Pics man!
