    As far as just getting the "point end" of the brisket, I think you did fine. Agreed that the rest of it probably got ground up. As far as the "grass fed" aspect, time will tell... Pictures look fairly lean for Wagyu. For less than $50 I can routinely get a 12-15# choice or maybe even prime packer from my local SAM's. Thinking it will take a pretty awesome review from you to change my shopping habits. Good luck & enjoy!

      HorseDoctor Even if it does turn out awesome this will be an atypical purchase for me. I got excited when I discovered this farm and it's near my home and I wanted to support them but I'm coming back down to earth. But I might be learning a valuable lesson from this purchase. I'll see this through and let you know how it turns out. Thanks for all of the input from you and Jared Broussard.

        My wife absolutely loved it. She said she has never had anything better. Not the steaks, not the butts, not the burgers. I appreciate that she liked it so much, but, I thought she was CRAZY! I liked all of those things better than this brisket. I just was not that impressed. The thing that shocked me was how much it shrunk. I swear it lost a third or more of it's size. But since I have never cooked one before to compare it to, I don't know if that's normal. The point was tender and juicy and tasted ok to me. I was real concerned that the flat was going to be overcooked so I took it off the smoker at 187°. It seemed tender enough so I took it off. Next time, no Wagyu. Just the regular USDA Choice stuff from the local supermarket. After my food processor arrives, I'll be grinding my own burgers. I think I'll like it better!

          Can't taste it from here but it sure looks great! I think ya dun gud! If it tastes half as good as it looks, I agree with your wife!

            HorseDoctor Thank you very much. You can't taste the picture for sure, but I appreciate the reassurance. It wasn't bad, it just wasn't great...to me. But then my wife thought I was the CRAZY one. I had couple little slices of leftover last night and it was pretty decent. Leftovers! Go figure.
