    My first brisket

    I purchased a 14# Select brisket and I cut into a 6 and 8# pieces, I cooked the point which was the 6# piece. I trimmed, then injected with beef stock and dry brined the day before, basically I followed Meathead's brisket instructions. On cook day I added Meathead's BBBR and cooked on my pellet smoker at 180F, I had it on by 5:25 am. I cooked until internal temperature was 150F, then I wrapped in aluminium foil and continued cooking until 204F, then I placed it in a cooler for 90 minutes to rest. It was very good, we made Meathead's Tx Mop sauce to go with it and it was good. I also made Meathead's Cole slaw as well see the attached pictures. It was very good and the leftovers are very good. Everyone who has tried it has liked it, I am pleased my first brisket was a success. The cook time was almost 13 hours, the next time I think I will smoke at a higher temperature, 225F.

      Great job! That smoke ring looks like a low temp cook if ever I seen one. I could go for a few slices of that about now....

        Great cook... Great smoke ring. That was an excellent first try on a brisket.👍 Next time step up a grade to a choice and I think you will notice a difference or... Shoot the works and buy USDA Prime and eat like a King.
