    Freezing A Packer?

I bought a 14 lb packer a couple weeks ago because it was on sale. It's been in the freezer since then. How long can I keep it frozen before it starts losing quality at the cook? It's in there in the cryovac package only.

If you froze it immediately upon getting it home and it is in original cryovac pack you should be fine for at least a month. I try and use all my frozen goods within a month or 6 weeks of freezing. I also vac pack everything that goes in the freezer so it doesn't get freezer burn.

Correct! In its cryovac bag or vacuum packed, meat will be in good shape for a LONG time. I found some venison loin in one of my freezers that was well over 1-2 years and it was just fine.

I remember as a kid that we had a big chest freezer stocked full of meats and leftovers (there were 4 kids so stockpiles were necessary) and one year for Thanksgiving we had a turkey that had been frozen for three years. Maybe it was the luck of the draw, maybe it was mom's way with food but t was delicious and nobody died.

I've had numerous beef roasts in my freezer for a year, only to find out that my dad had had them in his freezer for a year when he brought them over.

I'm going to call it "deep cold aged".

The one I did on the 4th had been frozen since November.

I also keep meat in the freezer for close to a year, mainly venison. Never goes bad. I think the longest a have kept a cryovac brisket is probably two months, only because I cook a lot of brisket and when I find what I want I buy it and freeze it ( usually have two or three in the freezer ) but when you cook about four a month they don't stay in there long.
