I had several pounds of brisket leftover from a whole packer. I wanted to do something different so I adapted an Ottolenghi recipe to use it up.
He cooks his smaller brisket in an Asian stock. I made the stock, strained it, and soaked my cold brisket in it to take on some of the flavor. After a few hours I removed the meat, shredded it, added some cooked carrots, celery and shallots, reduced the stock and mixed it all together. I made some 40g balls and stuck them in the fridge for about an hour and a half so that they’d firm up and not fall apart during the frying. Flour, egg wash and panko then into the oil for a couple minutes on each side, then into a 400 degree oven for 10 mins. Voila.
