Hello everyone,
Here is what I did w/ the four Wildfork Foods Waygu try tips. First, they were every nice, well marbled and needed to trimming.
I injected them with Butcher BBQ Prime Beef, diluted in sodium free beef stock, w/ granulated onion, garlic, ancho chili powder, and smoked black pepper. Let it marinate overnight.
Preped the KBQ stick burner. Used a combo of hickory and cherry splits.
Dried the meat and used olive oil as a binder.
Rubbed with/ Meat Church Holy Cow & Blanco Garlic & Jalapeño, w/ fresh cracked smoked black pepper.
I placed a pan of wagyu tallow in the smoker.
Smoked for 3 1/2 hours at 250.
Pulled at 160. Injected w/ smoked tallow. Wrapped in foil w/ added tallow. In oven till probe tender - 200.
Rested in preheated cooler for 45.
Sliced and poured the liquid from the foils over it.
Killer smoke ring, excellent color and bark, tender, juicy, smokey & so flavorful. Everyone raved that it was the best trip tip they ever had. A couple people commented that it tasted like brisket.
The frijoles de la olla, develes egg potato salad, green salad, and smoked assorted chills were good accompaniments. I also severed salsa borracha and sour cream, horseradish and applesauce sauce on the side for the beef.
The food was a success. Unfortunately, the gathering devolved into political and social ranting. For me, it was stressful and not enjoyable. Never inviting several of our neighbors again. I'm still kind of angry about it. I worked hard and spent a lot of money to provide an enjoyable experience. but it wound up being a political protest ralley.
