    Brisket prices

    I’m cooking a brisket Monday for the wife’s women’s church group dinner. I started checking prices around and was pleasantly surprised. I can go to the Walmart Supercenter and pick out a USDA prime for $5.96 a pound. It’s not like it used to be but that’s cheaper than their hamburger meat. I was expecting much worse for a prime brisket. If I had time to wet age one the choice briskets are $4.46 a pound. Sometimes it’s worth the trouble to look through the choice pile. I’ve found briskets there that looked as good as prime. I’ll be headed over to get it this afternoon. It’s a 25 mile trip one way to go to Walmart out here in the sticks.

    Our Albertsons has choice brisket on sale for $2.99 a pound. That is a cheap as I’ve seen it for a long time. Before the beef shortage I could catch it on sale for $1.99 a pound.

      At that price I’d have to put a couple in the garage fridge to wet age. They’d be ready just in time for football season.

    I picked a prime one up at Costco yesterday and it was $6.49/lb.

    Wowzers, my WalMart isn't even aware Prime is a thing when it comes to briskie.

    You're lucky if you can get Choice there, often Select is all they have. No thanks.

    I’m afraid the pretty picture I painted was wrong. I made it to the meat dept only to be told they were out of prime and out 0f choice too. That’s not what the online market showed. I bought a nice select and will just have to demonstrate my abilities to make it great. They are all I smoked for years because that’s what low and slow is all about. Taking a cheap cut and making it very good. I’ll be honest when I report how this went. If I blow it I’ll fess up.

      Sounds like my experience with WalMart. I always check the app before I go, but it does no good, its still iffy whether they have the item or not.

    Last week at Sam's, Prime brisket was $6 . More than I like to pay, but not out of reach.

              I got lucky on Monday at Costco. All they had left was Choice. I asked the butcher and he took 20 minutes but brought out a prime. I was very relieved and it’s in the fridge dry brining for the 4th. I will begin cooking it tonight. I’m so excited. I have no idea if it’s trimmed correctly but I’m following ecowper’s guide and I watched his YouTube video link about trimming. Here goes! I didn’t care about the price because we all pitched in to buy it so I’m only out like $40.

              Oak Smoke 25 miles. Yikes that $17 in gas in HB. I’m spoiled. I have an Albertson’s across the street from me. We walk there all the time. It’s about .02 miles

              make that select work!

              The prices mentioned here are wonderful compared to my Cupertino neighborhood here in Silicon Valley. Prime Brisket, which is hard to find, is $10 to $15 a pound. I am doing some prime short ribs tomorrow. On sale at Whole Foods for $9.99/lb. Look really good and not much waste.

                To follow up on the abovementioned prime plate short ribs, they came out really good. I smoked at 245 on the Kettle with a Lava baffle plate and snake. Oak wood. Final internal temp was 200. They were not dry but maybe could have been off the heat a little sooner. I tested with my probe, and they were tender at 285. But I kept them going per most recipes for short ribs. These prime quality short ribs had a good deal of marbling. No water pan. Bark was really good. Used Tuffy Stone's beef rub.

              I haven't cooked a brisket in at least two years, but came across this one on the meat case the other day and went for it. Angus Choice, $6.99/lb regular price, $5.99 with the store card. So I'm holding an 11-pounder at $67, and I can live with that.

                Sam's had Choice at $5.88. A 16-lb'er was $94 & change last week. That used to run me under $60.
