I would liked to have made the bun for that picture... It could add to the already great picture. The bun should have had a little browner and shinier finish and some sesame seeds combined with some poppy seeds.
You might be right about the sprouted grain flour with seeds. He didn't put an egg wash on it to make the surface shine though and no seeds to give depth for the picture.
