    Casino Roast and Other Musings

    At my work, one of my invoices shows a “casino roast”. I had to look it up. We have chilaquiles with a braised short rib option, but I do not recall seeing them on any invoices.

    Roast for braising or roasting.

    Then it dawned on me… could/would you sub casino roast for short ribs? So I perused this part of the Beef Topic and went through this post:

    I've seen dozens of beef charts on the old Interweb but I thought I'd share this one. It seems to be the best overview of all the contemporary cuts of beef and a little about how best to cook them. Thought someone would enjoy seeing this.


    and THAT reminded me of the alleged tri-tip that CRO received (see ranch steak on the chart).
