Now I’m worried. Do I need to toss them out? Should I smoke them this weekend and freeze till our church dinner? Might they be fine?
Thoughts?

I unwrapped last night. No off odor whatsoever. Trimed, injected, this morning I rubbed & into smoke bath w/ hickory splits.
Pulled when I liked the color, plus the back was starting to get a little crisp.
Butter paper wrap w/ some Wagyu tallow and into the oven to finish.
