    American Wagyu brisket.

    The house has been paid off for years, so I went off the deep end and bought...no, not a tractor or a boat, but a brisket. And not just any brisket; American Wagyu, from Snake River Farms. Got it at Rosauer's grocery, fresh. 7.035 pounds, ONLY $13.99 per pound. Basically ruined a Benjamin. This may be worthy of pictures, in due course.

    I think everyone should do this once and decide if they like it enough to do again. Congrats and enjoy the process .

      Looking forward to the report!
      I got two 12ish pound American Wagyu at Costco Business (Not SRF) for $9 and change a lb. Wet aging for a month and a half before the smoke bath.
      I’ll post a report too.

        I have cooked quite a few of those and they are excellent. I think the extra fat and the texture of the fat give it a wider margin for error than "regular" briskets. At that price though I am always very hesitant when trimming. Don't want to cut off any more than needed.

        And definitely save the trimmed fat to render into tallow.

          Is it a bad thing when buying Brisket envokes purchasing a boat or a car? I have to save up for a choice packer, otherwise Corporate Accounting will revoke my credit!

            Yo. Back when I was fooling with guns a lot, after 12 or 20, it was hard for Corporate Accounting to keep track. Plus, a locked gunroom, with just 1 key, was helpful.

            Given the immense price, they need to be enjoyed immensely.
            This is a practice run for a church cookout, using a battery powered pellet pooper which I have never done a brisket on.

          I received a guided tour of SRF's Toppenish, WA slaughter plant about 3 years ago. They process their own American Wagyu on Saturdays. On the hoof, they look under finished to me, kind of rangey, like they need another 300 pounds. It was interesting.

              I've cooked three American wagyu briskets. I found all 3 cooked faster than choice or prime ones. They were delicious.

              I did an American wagyu from Costco - not SRF, can't remember the brand, but it was only like $6.49/lb. There was a notable difference, it was a great brisket.

                Oh yeah! You are gonna love that. The richness and flavor is out of this world. Save the trimmed fat and make some Wagyu tallow, that is unmatched for secondary cooking.

                  I’ve come to find that Wagyu isn’t that much better than prime, but I haven’t had anything from SRF either. I’ve heard they’re top tier. Looking forward to hearing your thoughts!

                    My instinct is that Wagyu offers diminishing marginal return over USDA Prime, especially if there is a significant price differential. We shall see.

                    I did two American Wagyu Tri-tips recently. Expensive and, IMHO, not a lot different than a prime Tri-tip.

                    Right - when I said above it was a noticeable difference, it was, but it was mild to moderate. Since the cost difference was only like $0.50/lb, it was definitely worth it.
