I have nothing "authentic" in my past to compare it to, but I and my tablemates were quite pleased. The sous vide tri tip (131 F) was a nice MR and when followed by a sear on screaming hot Grill Grates had a great, deep brown crust. The pinquitos were great--firm but creamy, with a tasty broth. More of these cooks are in my future. Thanks to y'all for the comments on my earlier posts (a Hasty Bake is a likely purchase soon)!
