Valentines Surf and Turf Dinner - Dungeness and NY Steak

While we will occasionally go out to dinner, Staying home and preparing a fabulous Surf and Turf dinner has become a tradition. This year I will smoke on my MAK II Pellet Grill and reverse sear on my Lynx Propane grill. I haven't decided how to heat up the Dungeness Crab yet and my wife is responsible for everything else.

Normally I would go to Costco for their decent selection at more reasonable prices, at least compared to B & E Meats, my favorite Seattle area butcher. I meet friends for breakfast and cribbage every Friday and our cafe was next door to one of their stores so I splurged. They were out of Prime Ribeye so I am slumming with Prime New York and it is dry brining with a simple Kosher Salt and ground Pepper seasoning now.

I'll pull some big reds out of the wine cellar, probably something from Leonetti.

Looks and sounds outstanding. I haven't thought about playing cribbage since both my grandfather and father passed away many years ago.

I haven’t played cribbage since my Navy days. Not sure how to play anymore, but there’s a board around here somewhere

      I don't think I've played since college.

I’ve never played cribbage. In my college days it was chess and spades.

That’s going to be great. A proper surf and turf!

That looks like a great piece of meat. Supposed to rain here all day tomorrow so we’re going out to our favorite Tex-Mex restaurant mid-afternoon.

I’m making surf, surf and turf Sunday for me and my better half. Lobster tails, scallops and filets with mushroom risotto and asparagus.

Ain’t nothing wrong with a big ‘ol prime NY’er. I often prefer them over ribeyes. Paired with the Dungeness crab and you sir have one awesome meal ahead for the two of you. Yum.

Just had Dungeness crab a couple of weeks ago. Steamed and served hot (Don't boil it) or steamed and thrown into ice water, chilled and served cold or in a salad. Yum, yum, yum any way you do it. Love Dungeness crab. Best crab there is.

And that is close to a roast rather than a steak. You're sharing that steak, right? 1.23 lb is a big boy.

            Enjoy

We are doing surf and turf this year as well. I got a nice inch and a half + bone in rib steak from the supermarket meat counter. The butcher there custom cut it for me. It was nearly 2 lbs and with the sale price was only $18. The same supermarket also had lobster tails on sale so I bought a 2-pack. I will grill everything on the gasser later and serve with a Caesar salad. No potatoes this time since Barbara is trying to cut back on starches.

Here's a picture of the steak as it was about to go in the fridge for an overnight dry brined yesterday:
