    Brisket is a by product. Cattle are raised for all the other cuts of beef, not brisket. They can't increase supply just because demand for brisket increases.
    This is a very interesting point....and the one you made later that if brisket availability is increased to where the price drops, the market would be oversaturated with steaks, which is not a good thing for anyone with a relatively highly perishable product.

      The saving grace has to be, that they sell far more of cuts other than brisket.

    Paid $10.99/lb yesterday for a chuck roast and a London broil/eye round. My notes show chuck at $6.99-8.49/lb in 2022-23.
