    First attempt beef short ribs

    These turned okay but were a little dry. Tried to say at 225 but had a spike to 375 when my water pan ran out of water. Dried them out a bit. 4 1/2 hrs in apple and cherry. Upset with myself for not catching the spike.

    They still look great. Certainly give them a try again. They are a very rich treat when you can do em.

      Look pretty good. I do a 72h sous vide short rib, and am intending to do a side by side (maybe by side) presentation later this summer of 72h SV vs smoked (vs bayless braised) short rib, maybe for some friends...

        I had Chef bayless 35 hr short rib. Paid 50 bucks for 1 rib that was the size of my big toe. Was very under impressed.

        Sounds like Topolobambo. Wife and I had a good experience at Topo, but prefer Frontera Grill and Xoco.

        I make a recipe from his site for a braised short rib in dark beer with chiles and beans. Comes out fantastic.

      They look good to me Dan the man! The great part of BBQ is even your less than perfect cooks taste pretty darn good.😋

        I agree that they do look good. The sausages and kraut looks delicious. Is that chocolate cookies or pie? Chocolate is my favorite dessert, especially ice cream with chunks of chocolate cookies, brownies, or cake and some nuts.
